Congratulations to James Jackson, our Senior Sous Chef, who won this year’s Chef Competition at the Zanzibar Beach and Watersports Festival. The competition was open to Zanzibarian and Tanzanian chefs working in Zanzibar, and consisted of three rounds. A ‘Masterchef’ cook-off format was used and chefs were judged on a wide range of cooking techniques. Many of Zanzibar’s top hotels were represented by 20 contestants including chefs from Baraza, Sea Cliff, The Residence, Gemma Dell’ Est, Spice Island Resort, Mnemba Island Lodge and Royal Zanzibar Beach Resort.
Owner Tim Hendriks, General Manager Angelika Haase, Executive Chef Samir Adbdalla Ali and the rest of the management and staff at Ras Nungwi Beach Hotel are extremely proud of James’ achievement in this competition. James started working at Ras Nungwi Beach Hotel as a Chef de Partie four years ago and has proven himself to be a highly skilled chef, eager to learn, and exceptionally creative.
Ras Nungwi’s Ubora Restaurant and Bar, offering cuisine inspired largely by the region, blends perfectly with its surroundings. Using modern and up to date culinary trends, the cuisine focuses on the abundance of organic fruit and vegetables grown on the island while fresh fish and seafood takes pride of place on ever changing menus that take advantage of the fresh produce sourced and delivered daily to the hotel kitchen.
